After a bad experience in 2005/2006, when I had to take a legal action against two clients, I have been working with the same customers (agencies and direct clients) for a long time and as a rule I never accept large projects from a new client, unless they are a well-established international organization. Most of my clients pay on time, although the payment terms can be quite long: up to three months. When I expect a specific payment from a client, and it doesn't come through, I give it a week, but then I follow up. I must confess that I do not diligently check whether clients have paid, since most of my clients pay on time or nearly on time anyway. I really only discover non-payment periodically when I update my administration or if I'm waiting for a particularly large payment.
