Writing and poetry do depend on language, at times one more than one, but some people write solely for themselves, e. g. diaries. This would not make it a service, especially if only one language is used.
In the broadest sense even filling in a form could be considered a language service... which, of course, doesn't really make sense.

Filling a form is a legal/administrative service.
I would put writing/poetry under language service umbrella, not sure what else. | | | |

BTW, marketing requires a lot of creativity (not to be confused with art).
You can write literature as a service, as a ghostwriter. Not sure why you would say writing literature is not a service.
