We usually eat puddings with a spoon, don't we? Plus I've found that in N. American English it means a dessert with a soft or creamy consistency.

it's generic for soft and creamy desserts: "to be eated with a spoon". Just look for "sponge desserts" on google or something.

I guess you're right. as a matter of fact my knowledge of spongy desserts is mostly empirical and perhaps conditioned by personal "sweet" memories

"spoon desserts" is a miss translation you find only on translations forums. If you google just "spoon desserts" or "spoon" "desserts" there are no results for "dolce al cucchiaio". The best options are pudding (not milk pudding) or creamy desserts.
